Chicken Oat Loaf

This is our family favourite. I make this dish once a week. Use quinoa flakes instead of oats to make this dish gluten free. It is low fodmap, low fat, super healthy and super, super easy to make. I make two batches. One served hot with vegetables for dinner and one for lunch the next day served cold.

Ingredients

  • 500g minced chicken breast              
  • 1 cup quinoa flakes
  • ¼ cup lactose free skim milk              
  • 1 egg beaten
  • 1 cup grated carrot                            
  • 1 cup chopped allowed vegetables [or one cup of grated zucchini]

Method

  • Combine all ingredients and press into a tin.
  • Bake at 180°C for around 45 – 50 minutes
