No Bake Oat Balls

These low fodmap, low fat, no bake oat balls literally take just minutes to make. They make for a terrific snack especially when craving something sweet and because they are high fibre they will keep you feeling fuller for longer.

Ingredients

  • ¾ cup rolled oats or use quinoa flakes or rice flakes for gluten free
  • 2 tablespoons pepitas or any seeds
  • 1 pinch salt
  • 2 tablespoons rice syrup or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark chocolate chips

Method

Blitz oats, seeds and salt until slightly broken down

Add maple syrup and vanilla and blitz until mixture starts to stick together

Add chocolate chips and blitz again for a second

Roll mixture into 8 balls and place in fridge to set

Store in fridge in an airtight container.
