Vegetable Savoury Squares

These low fodmap, low fat veggie savoury squares make for a great afternoon tea either on their own or served with a low fodmap dip such as a homemade pumpkin dip. They are super easy to make.

Ingredients

  • 1 ½ cups gluten free plain flour
  • 3 tablespoon baking powder
  • 2 medium zucchini grated
  • 1 medium carrot grated
  • 1 cup low fat cheese grated
  • 1 cup diced tomato
  • 4 large eggs

Method

  1. Pre heat oven to 180°C
  2. Grease a large slice tin and line with baking paper
  3. Combine all ingredients in a large bowl. Spoon into tin and smooth the surface until about 3cm deep
  4. Bake for 35-40 minutes until golden
  5. Remove from oven and leave in tin to cool. Cut into squares
