Egg White Quiches.
Recipes > Savoury Biscuits, Muffins and LoavesThese delicious, low fodmap, low fat, low carb mini quiches are terrific for a snack or great for a meal served with a side salad. Make ahead of time and freeze individually. Simply microwave and serve.
Ingredients
- 2 cups baby spinach
- 12 egg whites [I use Puregg White Mix]
- 1 tsp dried basil
- 6 tbsp shredded low fat cheese
- ¾ cup diced ham or chicken or any cooked vegetable
- Salt and pepper to taste
- Pre-heat oven to 180° and coat a muffin pan with oil spray.
- Cook the spinach until wilted – about 3 minutes. Remove from heat
- In a large bowl whisk the egg whites until light and frothy – about 2 minutes.
- Whisk in the basil and season with salt and pepper. Stir in all other ingredients.
- Divide between the muffin cups and bake for 20 to 30 minutes depending on the size of the muffins. Cool before serving.
