Quick One Pot Beef Casserole

This low fat, low fodmap, high fibre beef casserole uses just one pot. Is super simple to make and ready in under 30 minutes. It is a complete meal in itself

Ingredients

  • 500gm lean mince
  • Small zucchini diced
  • 1 diced red capsicum
  • 3½ cups diced tomatoes
  • 2 small carrots diced. Can use any vegetable here
  • 1 cup rice
  • 1 cup water
  • Paprika and pepper, herbs and spices to flavour

Method

  1. Brown the mince in a large fry pan or saucepan.
  2. Add all other ingredients EXCEPT the rice and simmer over a low heat for 20 minutes
  3. Add the rice and continue cooking until rice is cooked and mixture has thickened. Adjust with extra water if needed.
