Quick One Pot Beef Casserole

Ingredients
- 500gm lean mince
- Small zucchini diced
- 1 diced red capsicum
- 3½ cups diced tomatoes
- 2 small carrots diced. Can use any vegetable here
- 1 cup rice
- 1 cup water
- Paprika and pepper, herbs and spices to flavour
Method
- Brown the mince in a large fry pan or saucepan.
- Add all other ingredients EXCEPT the rice and simmer over a low heat for 20 minutes
- Add the rice and continue cooking until rice is cooked and mixture has thickened. Adjust with extra water if needed.
