Angel Cake in a Mug

This super easy, super quick low Fodmap Cake is ready in literally seconds. Simply mix everything together and pop into the microwave for 45 seconds and enjoy. A delicious dessert.

Ingredients

  • 2 tablespoons gluten free self-raising flour
  • 1 tablespoon sugar
  • 1/3 teaspoon baking powder
  • 1 tablespoon canola oil
  • 1 egg white
  • 1/4 teaspoon almond extract or vanilla extract

Method

  1. In mug, add ingredients and mix with fork until mixture is smooth and creamy.
  2. Place in microwave for 45* seconds or until cake tester comes out clean. Cooking time can vary due to the size of the mug you use and power of your microwave. *Check on cake after 30 seconds and cook in 5-10 second increments until cake is cooked through.

Tip: If you only have plain gluten free flour and not self-raising use the same amount of flour and add a third of a teaspoon of baking powder.
