Low Fat Lasagne

This low fat, low fodmap lasagne makes for a terrific meal served with a salad or side of vegetables. This meal does not need cheese because the rice paper gives a creamy texture. The entire family will enjoy this one. Because this recipe uses rice paper instead of lasagne sheets the overall recipe is much, much lower in carbs than the traditional

Ingredients

  • 1 pkt rice paper
  • 500g mince – either lamb/beef or chicken
  • Assorted grated vegetables: carrot, zucchini, bok choy, pumpkin
  • 1 cup lactose free milk
  • 2 tablespoons margarine
  • 2 tablespoons plain gluten free flour
  • ¼ cup of gluten free breadcrumbs

Method

1. Make a rue [slight paste] with the margarine and flour. Add the lactose free mil and stir until thickens - about 10 minutes

2. In another saucepan cook the mince and veggies until soft and mince is cooked.

3. Using a shallow plate, bowl or container with around 10 cm of cold water in it soften the rice sheets for around 1 minute each.

4. In your baking dish, place mince on the bottom and top with two sheets of softened rice paper and then white sauce.

5. Repeat process as many times as dish allows.

6. Finish with a double layer of rice paper and white sauce on top and sprinkle on breadcrumbs. Bake in fan forced oven of 160°C for 30 mins.
