Strawberry Breakfast Slice

This super easy, low fodmap strawberry slice makes for a delicious start to your day. The high protein content of the quinoa flakes will leave you full and satisfied all morning. This slice also makes for a delicious morning or afternoon tea.

Ingredients

  • 2 cups quinoa flakes
  • 2 cups lactose free milk
  • 2 eggs
  • ¼ cup rice syrup
  • 1 tsp vanilla powder
  • 3 tablespoons margarine
  • 1 cup fresh strawberries
  • ½ cup macadamia nuts

Method

  1. Preheat oven to 180°C
  2. Place quinoa flakes in a greased or lined tray.
  3. In a blender or large jug mix the eggs, milk, rice syrup, vanilla powder and margarine and pour over flakes. Top with the berries and nuts.
  4. Place in oven for approx 30 minutes or until set - firm in the middle.
